My mom’s family is from the smokey mts and she never mentioned game. In England, the main squirrel season is spring because all the other hunting seasons are over, per NY Times

Though the meat is available all year long, it is in the spring, when hunting season is over, that country folk can focus their attentions on controlling the squirrel population.

Though I would think that’s birthing season, however since the goal is culling….here’s my fave site http://www.asktheexterminator&.....ipes.shtml

I like his humorous arguments pro and con for eating squirrel

ahh - I would give almost anything for a mess of fried squirrel (did I just give my roots away with “mess”? or with “fried squierrel?), biscuits, gravy and fried potatoes.. now that’s a dinner of champions I remember from childhood, growing up in Southern IL (near to Western KY, by the way)..

Being the momma’s boy (who knew I’d turn out gay?!?) I was, I never really learned to hunt w/Daddy, so I’m kind of outta luck now.. besides, I live in the city and I think I’d probably be in much-o trouble-o if I tried to pick off the urban squirrels around our downtown condo!

But thanks for the memories (although Fergus Henderson’s recipe sounds repulsive and i don’t know about cooking a squirrel in a crock pot - although I really do love crock!)..

David
Nashville

ps - oh, and I never got into the squirrel heads.. although my mom always loved them. That explains a lot! :)

I guess I’m lucky. Growing up in Kentucky, there was a “squirrel season” in the fall. (I assume there still is one.) I used to go with my dad occasionally. He’d carry his 22.

I also recall eating squirrel most years. Usually soaked in salt water then fried. And yes, IIRC, it did taste enough like chicken as to not make any difference.
